Italian cold-cuts

Bresaolacured beef eye of round with juniper, pepper and thyme notes. Rich, nutritious, lean and full-flavored.

Filetto –  produced from the most delicate cut of pork, the tenderloin. Dry brined in herbs and garlic to produce a velvety smooth texture and flavor.

Coppa – dry-cured pork shoulder, carefully aged to produce a full-bodied delicate treat. Coppa is excellent for pairing with cheese or preserves at your next celebration.

Lomomade from the naturally lean and rich pork loin. Carefully dry brined in salt, spices, and herbs, this makes an excellent addition to any charcuterie plate. 

Pancetta – Classic Italian style “bacon” Cured in the traditional style with peppercorns and juniper berries, then aged to perfection. The aroma has the nutty fragrant of a fine dry sherry.
